Why does Field Doctor use garlic infused olive oil in low FODMAP meals?Updated 2 months ago

Field Doctor offers a large range of low FODMAP safe meals, where we use extra virgin olive oil infused with garlic.

Garlic is high in the FODMAP subgroup called 'fructans' (one of the oligosaccharides), so can trigger symptoms in individuals with IBS and FODMAP sensitivities. When following a low FODMAP diet, it's crucial to limit all FODMAP sub-groups, including fructans, to identify your personal triggers through reintroduction and testing.

Our garlic-infused oil is low FODMAP because fructans are water soluble but not fat soluble. In water, fructans leach out into the liquid, but this does not happen with oil. This allows the flavour molecules of garlic to infuse into extra virgin olive oil, making it a suitable and flavourful option for low FODMAP cooking.
